Please note the price is an estimate WHICH WILL VARY, OF COURSE, WITH THE ACTUAL LAMB but will be based on ACTUAL RETAIL WEIGHT DELIVERED and not "hanging weight", which although customary can be confusing or misleading. Also no separate charges for wrapping. PRICE INCLUDES PROCESSING, VACUUM PACKAGING AND FREEZING for the best flavor! Our simplified pricing is is our attempt to be simple and complete. Our price APPEARS to be higher, but it is really just simplified for clarity. You would still pay a similar complete final price for your meat if buying elswhere, but you would be paying for the waste and for the various processes individually. This is simply a retail, complete price.
Please Note - We no longer sell lamb by the hanging weight. We have found that it often confuses folks. Typically when you purchase a meat animal from a farm, it needs to go to a processor to eventually become those lovely packages in your freezer. This where the confusion starts. Say (for easy illustration purposes) you have a lamb that is 100 pounds LIVE weight, or "on the hoof". when the skin and entrails are removed, you have a carcass that may weigh around 60 pounds, or 60% of the live weight. This is referred to as HANGING weight, and is often the price you are quoted. The confusion continues when the box of meat is finally delivered. After cutting fat and waste from the carcass, trimming to an customer's order, perhaps de-boning some cuts and so on, there will remain perhaps 60% or less of the CARCASS weight. This is the CUT weight or RETAIL weight, and is what most folks are used to when buying from a grocery.
If you have been confused in the past, chances are neither your farmer nor butcher has cheated you, the amount of meat you received was a function of the butchering process and the specific cuts you requested.
In an attempt to simply things, we have decided to concentrate on the most popular cuts we have sold in the past. We get the processing done for you, vacuum pack and freeze, label and just get it ready for your home. WHILE OUR PRICE MAY SEEM INITIALLY HIGHER THAN YOU SEE ADVERTISED ELSEWHERE, PLEASE REMEMBER THAT GENERALLY THAT PRICE WILL BE A "HANGING" OR EVEN A "LIVE" WEIGHT PRICE WHICH MEANS YOU ARE PAYING FOR THE TRIM AND WASTE. Our price is for the meat you actually receive.
Our price would be more fairly compared to your grocery store price - IF you could buy local, grass fed American lamb there. Our quality will speak for itself! and the price you see represents a fair price to you, to the butcher as well us to us, the farmer/retailer. One taste, and we are sure you will agree that grass fed lamb is a special treat.
